Gift Certificates

Tim’s Pastry Club gift certificates make wonderful gifts for any occasion.

Each card has blank lines for you to enter the name of the recipient and your own name as the giver. The card will be sent to the purchaser with an unsealed envelope so you enter the details and give to your loved ones as a gift. Alternatively we can send directly to the receiver and enter the details for you.

Each gift certificate is £40 and can be used to book a class by emailing Tim directly to arrange which class they would like to attend.

Chocolate Brownies & American Muffins

Chocolate brownies are the classic American pastry, each student will make a slab of perfect chocolate brownie with a perfect crust and a gooey centre. We will also be making a batch of American muffins perfect for mid-morning snacks or a breakfast on the go. A choice of fruits and chocolate can be chosen on the day.

Patisserie Class

Our special patisserie term is a 5 hour class making a wider selection of beautiful pastries and petit fours. In this class we work together as a workshop making Danish pastries, individual chocolate delices, glazed lemon curd tartlets, salted caramel macarons, raspberry pate de fruit jellies and divide the good up so each student takes home a beautiful selection of pastry with recipes too.

Chocolate Fondants & Honeycomb Bars

Chocolate fondant is a true test of a pastry cooks skill, the simple chocolate pudding baked to perfection to produce a runny centre. We will also make honeycomb bars dipped in gorgeous Belgian chocolate and wrapped in cellophane bags.

Shortcrust Pastry & Meat Pies

This savoury class masters baking pies. Each student will make a batch of shortcrust pastry which will be made into pies from a choice of cooked meats and vegetables then baked to golden brown perfection.

Puff Pastry & Gateau Pithivier

Gateau pithivier is a classic puff pastry dish filled with almond frangipane, a technically difficult dish that requires precision to get right. Each student will make a batch of full puff pastry and almond frangipane and bake a beautiful pithivier.

One of my personal favourite dishes and an all-time classic pie. Each student will make a batch of sweet-short pastry tangy lemon curd and a fluffy meringue baked to a lovely golden brown.

One of our most popular classes making gorgeous chocolate mendiants studded with toasted nuts and candied fruits. Each student will also make a batch of gorgeous hand-rolled truffles all packed up in cellophane bags to make perfect Christmas gifts.

Hand-made Chocolates & Chocolate lollipops

In this class will also make gift wrapped chocolate perfect for presents, each student will make a batch of hand-made chocolates made in chocolate moulds and with a batch of chocolate lollipops every child’s favourite treat.

Chocolate Yule Log

Our last class of the year is making a beautiful chocolate swiss roll with rum or vanilla syrup layered with chocolate cream and decorated. The perfect alternative dessert to Christmas pudding or as a cake.
