Welcome to Tim’s Pastry Club

Tim’s Pastry Club was set-up by award winning pastry chef and teacher Tim Fisher to help people develop their pastry, baking & chocolate skills. Classes run on Saturdays from 10:15 to 12:45 at the Oasis Academy in Coulsdon Surrey.

The classes are informal and cater for all levels of ability and experience. Each class is personally taught by Tim. They are great for making new friends as well as learning new skills.

Tim has over 30 years of professional experience and has won many prestigious awards including the Dessert of the Year title and numerous Gold, Silver & Bronze medals at the British Open Cookery Championships.

News December 2020

Welcome to the last updates for 2020 from Tim’s pastry Club. The year is ending like the rest of 2020, namely in confusion with ever moving goalposts. Unfortunately all our remaining classes for 2020 have been cancelled by Oasis so this year we have only run 9 classes not our normal 35-40 which has been extremely disappointing for everyone. On the plus side two books were published Café Cakes in July and Macarons and Macaroons which came out last week. I have also written the next book Ice Creams and Sorbets which will be published in March in time for hopefully a glorious summer which will necessitate making beautiful ice cream dishes to cool down, we live in hope!

As anyone who knows me will remember I used to sell hand-made chocolates commercially so I will be writing my first book on chocolates which I aim to have ready for next August/September perfect for Christmas presents. So anyone wanting to know how I made those lime filled chocolates or liquid salted caramel can finally see how they were done.

Like everyone I am thinking how best to use my time, be productive and keep a positive mental attitude so I am working very hard to write books. Keener eyes will notice that I have not posted recipes lately on the site and this is because I intend to replace this feature with YouTube Videos which I am going to work on very soon. I have set all my spare time aside for December to write a Christmas cookbook or more accurately a cook book for dishes made during the Christmas period as many people do not like spices or heavy puddings. So expect a book using the wonderful ingredients available during December to make some sweet and savoury items including canapes, buffet items, lighter puddings and seasonal confections using fruits, chocolate and spices so something for everyone.

Obviously the Covid situation has been very disruptive for booking classes but I have taken the view that we will advertise classes for January and refund if they get cancelled. I think we have to take the positive view so when the classes are available to be booked please book with confidence and if the classes do not run I will refund payments immediately. We hope that they will run as do Oasis but we simply do not know yet if they can so we have decided to be positive and put them up. Measures appropriate to current government guidelines will be in place as required at the time.

    A lovely way to learn to bake yummy cakes, bread etc…. Able to take away recipes and cook them again. Plenty of great tips. As well as lots of tea, coffee and fun. Always being shown how to do things the correct way that always works.
