News October 2020

Hi Everyone,

I hope you are all bearing up in these most difficult of times. Pastry club has had a mixed year. I lost six months of pastry classes due to the pandemic but managed to publish book 3 Café Cakes in July which has sold well. I am very pleased to say we have managed to get 5 classes running for the remaining part of 2020. There are still a few places left for the 3 December classes if you want to grab a last minute place. I have also been in discussion this week with Oasis academy in Coulsdon and I am pleased to say that we are running classes again from January 2021. I am starting classes a bit earlier in 2021 than normal so please check back soon. I will be putting up the new class schedule up in the first week of November. Please be assured that measures are in place and we have a safe environment so please book places with confidence.

Depending on current advice, measures appropriate to government guidelines will be in place. Due to the transient nature of the Covid situation we will post information nearer the time. Any information on measures required will be sent out prior to classes. The policy of pastry club at this time is that if Oasis are forced to close the school resulting in a cancelled class refunds for classes cancelled by oasis will be issued. If the class is running pastry club policy as stated in out FAQ will still apply. Please check the FAQ page if you need any further information or drop me a message.

I am pleased to say that as I was forcibly housebound I used my time productively and have nearly completed two more books. The next book will be Macarons and Macaroons and is in final stages of completion. Macarons and Macaroons should be on amazon in November in time for Christmas, so if you are looking for a moderately priced Christmas present hopefully this ticks the box. Book 4 has 32 recipes, 28 French macarons including Liquorice, Lime, raspberry, Rhubarb & Custard, Salted Caramel, Pistachio, Blueberry Cheesecake and many more. There are 3 English macaroons: Hazelnut, Almond & Coconut and a lovely Amaretti biscuit recipe.

I have also finished book 5 Ice Creams and Sorbets to be published next year probably in March again with 32 recipes.

Lastly I am planning a Youtube channel to produce “how you make that” type videos. These will be aimed at students who come to my classes and people who purchase my books. I am working on that and intend to shoot some videos around December and hope to have these set up for next year so watch this space.

I hope to see you at a class soon, in the meantime if you are unable to get to a class check out my books and try some recipes at home.

Happy baking and stay safe

Tim xx
